A Little Cuisine... "My Pho"

My husband and I recently discovered  Vietnamese Pho and are hooked! One night we both had an uncontrollable craving for it at 8:00 pm. We packed our tired kids in the car and drove to WVC just for the fresh spicy and salty taste of pho! From that experience we suspected that it must be full of MSG, hence the uncontrollable craving! One night we were craving it again and I thought I can make this bowl of yummy freshness without MSG so I searched for recipes, they all seemed quite time consuming and complicated so I decided to make it my own way and I just happened to have rice noodles in my cupboard, it was meant to be!  So here it is, drum roll please My Pho.......
Broth
6 cups chicken or beef broth
1/2 TBSP Basil dried or fresh
1 small onion
1 TBSP fresh grated ginger
Bring all ingredients to a boil then let simmer while preparing next steps.

Stir Fry
1 Package rice noodles
2 TBSP Hoisin Sauce (or more, depending on your taste)
1 pound chicken or beef
Prepare noodles as directed on package.
Slice your meat thin and stir fry in a wok or frying pan with sesame oil or olive oil.
Add noodles and hoisin to noodles. I keep the meat and noodles separate, it's difficult to mix anything with the rice noodles.

Garnish
Bean Sprouts
Match stick carrots
Lime
Fresh Basil or Cilantro

More Hoisin and Chili Sauce

Fill your bowl half way with broth, then add some noodles and meat, then load your bowl with fresh garnish!

Mmmmmmm Freshness!!!

My hubby thinks mine is better than the 'real thing'! It even sparked a standing ovation from him!

The best part is that my kids LOVED it!
(They even LOVED the bean sprouts!)
If you make it they will eat it! I wish this was true every night!

thank you tami! this looks so delicious. i can't wait to try it. the only ingredient i don't recognize is hoisin sauce... what is it/where do you get it?

You can get hoisin at any grocery store in the Asian section. Small glass bottle, dark brown. Enjoy!

It sounds delightful...think I would like it even better if someone else made it for me (I have a terrible head cold) hint, hint! LOL

Oh, I love Pho!!! And the best place to get it is WVC! I always get mine plain, with extra noodles, and I love their plum sauce...Mmmmm so good, can't wait to try your recipe!

p.s., I've tried many many places over the years, and Pho Hoa is by far the best!
