A Little Breakfast... Swiss Oatmeal

 


I am not a big fan of commercial cereal. I will eat it, but I much prefer ingredients that I can pronounce.  My breakfast of choice is usually oatmeal or yogurt.  I have been able to convince only my 7 yr old daughter that oatmeal is great. (My boys, on the other hand, still bemoan the year I insisted we ban commercial cereal.)

In the winter, we come up with all sorts of hot combinations.  In the summer, this is our favorite recipe.  I fell in love with Corner Bakery when on a trip to Chicago. Many thanks to GF Lesley for coming up with this recipe.  I altered her version by changing the sweetener.

Stir this up the night before and stick it in the fridge.  In the morning it will help you power through your day.

Just Like Corner Bakery's Swiss Oatmeal


Servings: 2

1 cup old-fashioned oats
1 cup plain, low-fat yogurt
1 c. frozen berries, cranberries, or peaches (I love blackberries or huckleberries)
1 Granny Smith apple, finely chopped
2 T. sliced almonds
½ teaspoon vanilla
½ teaspoon cinnamon
Sweetener to taste (honey, maple syrup, agave syrup, stevia, etc)

Combine all ingredients, let soak a couple of hours overnight.
Another good fruit combination is fresh pineapple and chopped oranges.

Yum, this looks good. Do you heat it up in the morning or eat it cold?

Hana - eat it cold. It's perfect for summer.
